Menu Plan Monday #4

Ok, so I've slacked on menu planning since hubs has been gone. But I really need to get back on it. Just menu planning alone I was starting to lose weight. Now that I am starting to get back into running also I really want to get back to having healthy meals for at least dinner.

As soon as I get back on track with dinners, I'll add in breakfast, then lunches. :)

So without further ado, here is this weeks meal plan.

SUNDAY: Spaghetti (as always)

MONDAY: Blackened Tilapia with Brussel Sprouts & Bacon Medley

TUESDAY: Tomato, Oregano and Pine Nut Stuffed Pork Medalions with Baked Carrots

WEDNESDAY: Shepards Pie with Roasted Sweet Potato with Rosemary

THURSDAY: Roasted Salmon with Fennel, Red Onion and Tomatoes with Creamed Spinach

FRIDAY: Pizza Night!!!

SATURDAY: Mushroom and Hazelnut Chicken with Coconut Creamed Leaks

All are from The Paleo Recipe Cookbook. I'll let you know how they turn out.

  1. I find that when I track what I eat I see the results in weight loss. You're menu sounds amazing!! I think I need to check out that cookbook

  4. I keep hearing about this Paleo diet but haven't taken the time to look into it. Knowing me and my cooking habits (which are non-existent) I would have a really hard time! You can come cook for me though?? :) The shepherd's pie sounds divineeee!
